cheese and soft bread for breakfast sitting in the square watching the world go by...in their burnoose, djalbe, straw hats, hijab, and western clothes.....soft cheese light, very very fresh, like a ricotta but less smooth in consistency....reminded me of kaimak in Mostar, and reminded Aram of home in Suleymania in Iraq. Maybe I'll make some what we English call cottage cheese this summer
